Evan is horrible at coming up with Christmas presents for everyone, so after he started brewing, he began to brew everyone’s Christmas presents instead. The rules of the game are: the beer needs to be high ABV, and it must be bottle-conditioned. That way, if some makes it past Christmas Day, it could be shared later with family and friends. Joey and John were pulled into this tradition in 2020 and helped come up with the inspiration for this beer, the pomander.

Recipe and process by Evan

The recipe is fairly standard for a doppelbock, but we decided to use our standard “pilsner” malt instead of actual pilsner for that corn goodness. The spicing was inspired by the pomander, an orange studded with cloves, used in Europe during the time of the Black Death to cover up and purify the “bad air.”

When opening this beer I believe the first words out of my mouth were “This smells like Christmas,” which to me is a good thing.
