Malt: American “Pilsner” (6-row & corn), Rye, Crystal

Adjuncts: Dextrose

Hops: Cascade, Centennial, Chinook

One of the first beers that Joey recommended to Evan was Saison Dupont. The spice character of this beer inspired Evan to attempt several times to try and recreate it, to moderate success. This is CCMF’s second take on the rye saison.

Recipe and process by Evan

As with the original rye saison, the idea of this recipe was to take the spice character we all love in Saison Dupont and turn it up to eleven. This is accomplished using rye malt and several hops that add to the saison yeast character.

In batch number two, SafAle BE-134 was chosen for its attenuation as well as having potentially more spice character. To dry the beer out, more dextrose was added as an adjunct in place of some grain. Due to keg system issues we didn’t quite get the carbonation we wanted for a saison, but the flavor was more in line with the original vision. Future brews of this beer will likely use a different Belgian saison yeast strain and will be bottle-conditioned for maximum bubbliness.
