One of the first beers that Joey recommended to Evan was Saison Dupont. The spice character of this beer inspired Evan to attempt several times to try and recreate it, to moderate success. After Evan invited Joey to brew for the first time in 2019, they decided to take a gander at the recipe again. This recipe is a paradox; both a reminder of the beginning, and the road map to the future.

The idea of this recipe was to take the spice character we all love in Saison Dupont and turn it up to 11. This is accomplished using rye malt and several hops that add to the saison yeast character.

In batch number one we chose a French saison ale yeast for its attenuation, as we all wanted a drier saison. Due to the use of French saison yeast, the spice character was less apparent and the beer was more fruit-forward than we wanted. Thus begun our search for our perfect saison yeast strain to create a perfect beer.
